Green Chilli Chicken Fry

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Serves 4











Ingredients:

1 pound chicken
1 teaspoon kashmiri chilli powder
1 teaspoon lemon juice
1/2 teaspoon vinegar
1/2 teaspoon ginger gralic paste
6 - 8 green chillies cut lengthwise
curry leaves
salt to taste
oil

Method:

Add chilli powder, lemon juice, vinegar, ginger garlic paste and salt to chicken. Mix it well and marinate for 30 minutes.

Heat oil in a pan. Add green chillies to it and saute for a minute. Add the marinated chicken and cover and cook until the chicken is done and there is no water left. Open the lid and saute for 2 -3 minutes.

I used kashmiri chilli powder to get the color. The heat is completely from the green chillies so be a little generous if you are a spice lover.

Onion Bajji

Preparation Time: 15 mins
Cooking Time: 10 minutes
Serves 4











Ingredients:

1 cup besan/kadala maavu/gram flour
1/2 cup minced onion
1 cup finely chopped corriander leaf
1/2 cup finely chopped green chillies
1/4 teaspoon asafoetida
salt to taste
oil for frying

Method:

Mix all the ingredients in little water. The batter should not be too thin. It should be a little thicker than idli/dosa batter.

Heat oil in a pan and deep fry.

Paneer Fingers

Preparation Time: 20 mins
Cooking Time: 15 mins
Serves 4












Ingredients:

200 gms paneer
1 tbsp chopped ginger
1 tbsp chopped garlic
5-10 whole red chillies
1 teaspoon oil
cury leaves
salt to taste

Method:

Heat oil in a pan. Add the chopped ginger, garlic, red chillies and curry leaves. Saute for a min and add paneer fingers to it. Add salt and saute until paneer cooks and gets crispy. Cook in low heat.

Baked Chicken



I am back after my long hiatus. I am back with this yummy baked chicken. This is my version of tandoori chicken sans tandoor. lol

Preparation Time: 2-3 hours
Cooking Time: 20 mins
Serves: 4





Ingredients:

1 pound chicken
2 tbsp Eastern Chicken Fry Masala
1 teaspoon Chilli Powder
2 teaspoon pepper powder
1 lemon
2 teapoon white vinegar
1 tbsp yoghurt
1/4 teaspoon food color (Optional)
salt per taste
cooking oil

Method:

Add all spices, lemon juice, vinegar, youghurt and salt to chicken and mix well. Refridgerate it for 2 - 3 hours.
Preheat the oven to 400 degrees.
Spray little oil on a baking tray and place the chicken pieces.
Place it in the oven and bake for 20 mins.

Yummy yum chicken is ready and will taste great with mint chutney.

CHICKEN FRY


Preparation Time: 1 hour
Cooking Time:20 mins
Ingredients:
1 lb chicken
3 tablespoon pepper powder
1 teaspoon chilli powder
1/2 teaspoon garam masala
1 tablespoon ginger garlic paste
1/4 teaspoon food colour
1 teaspoon white vinegar
1 tablespoon lemon juice
oil
Method
Marinate the chicken with all the above ingredients(except oil) for 2 hrs.
Heat oil in a pan and deep fry the chicken. Serve Hot...

CABBAGE MANCHURIAN



Preparation Time: 15 mins
Cooking time: 30 mins

Serves 4.

Ingredients:

Section 1:
For Manchurian Balls:

2 cups grated cabbage
1 cup maida flour
1 teaspoon ginger paste
1 teaspoon garlic paste
salt to taste
oil

Section 2:
For Gravy:

1/2 cup capsicum, chopped
1/2 cup spring onions, chopped
1 teaspoon ginger paste
1 teaspoon garlic paste
3 dry red chillies
1 teaspoon corn flour
1 tablespoon soya sauce
1 teaspoon vinegar
1/4 teaspoon food color
salt to taste
oil

Method

Mix all the ingredients in section 1, except oil, using little water. The dough should be of consistency for making small balls. Make small balls and deep fry them in the oil until they turn golden brown.

Heat oil in a pan. Add ginger garlic paste, crushed red chillies from section 2 and fry for a minute. Add salt, spring onions, capsicum and stir fry on high flame for a minute. Add 1 cup water and bring it to a boil. Dissolve corn flour in 1/4 cup water and gradually add to the gravy, stirring continously till it resumes boiling. Boil till the gravy becomes transparent.

Add soya sauce, food color and manchurian balls. Cook until it is dry. Remove from fire and add vinegar.

Serve hot...

SHRIMP FRY





Preparation Time: 45 mins
Cooking Time: 25 mins

Serves 3.

Ingredients:
Section 1:
To Marinate:

500 gms shrimp
2 teaspoon chilli powder
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
2 tablespoon lemon juice
1 tablespoon vinegar
2 tablespoon pepper powder
Salt to taste

Section 2:
To Chop:

1 cup pearl onions, finely chopped
3 tablespoon coconut pieces
1 tablespoon ginger, finely chopped
1 tablespoon garlic, finely chopped

Section 3:
To Garnish:

3 teaspoon coconut oil
4 Dry red chillies
curry leaves

Method

Make a paste with the ingredients in section 1 and marinate the shrimp in for 2 hrs in the refridgerator.

Heat oil in a pan. Add the finely chopped ginger and garlic. Saute it for 2 mins. Now add the chopped onions, red chillies, coconut, curry leaves and saute until it turns golden brown.
Add the marinated shrimp and fry it until done.

Serve hot...
