Egg Burji

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves 2












Ingredients

3 eggs
1 small onion chopped
1 tablespoon chopped cilantro
5 green chillies
1 teaspoon minced ginger
curry leaves
salt to taste
oil

Method:

Heat oil in a pan. Add onion, ginger, green chillies and curry leaves until onion turns transparent. Add the chopped cilantro and saute for 2 more minutes

Beat eggs with salt in a bowl. Add the beaten egg to the onion mixture and saute until the egg is cooked.

Egg Fry

Preparation Time : 5 mins
Cooking Time: 15 - 20 mins
Serves 3











Ingredients:

5 eggs
4 cloves of chopped garlic
1 teaspoon chilli powder
1 teaspoon pepper powder
1/4 teaspoon turmeric powder
1/2 teaspoon lemon juice
salt to taste
oil

Method:

Hard boil the eggs and cut into halves.

Mix all the spice powders and salt in lemon juice. Rub this mixture on the halved eggs. Marinate for 10 minutes.

Heat oil in a pan. Add the garlic and saute until it turns golden brown. Place the eggs face down on the pan. Cook for 1 - 2 mins. Turn the eggs over and switch off the stove.

Mutta Curry


Ingredients:

4 Eggs
1 small onion, chopped
1 small tomato, chopped
1 medium potato, chopped
4 green chillies
1/4 teaspoon turmeric powder
1/4 teaspoon chilly powder
Salt to taste

To Grind:
1/2 cup coconut. grated
1 pod garlic
1/2 inch cinnamon
2 cardamom
4 cloves
1 teaspoon fennel seeds

To Garnish:
2 teaspoon oil
1/4 spoon mustard
2 dried red chilly
1 sprig curry leaves
coriander leaves

Method:

Hard boil the eggs.

Pressure cook chopped onions, tomatoes, potatoes and green chillies along with turmeric powder, chilly powder and salt.

Grind all the ingredients under the "To Grind" section.

Add the grind mixture to the cooked vegetables and bring it to a boil. Add the eggs and let it boil for some more time.

Heat oil in a tava and add all the items under "To Garnish" section except coriander leaves. Pour it into the curry and add coriander leaves to it.

Egg Masala

I usually use Roma Tomatoes to make this dish. It gives the curry a nice color.


Preparation Time: 15 mins
Cooking Time: 15 mins
Serves 4








Ingredients:

4 eggs
1 onion
2 tomatoes
3 colves
1/2 teaspoon fenugreek
1/2 inch cinnamon stick
2 teaspoon chilli powder
3 teaspoon dhania powder
1/4 teaspoon turmeric powder
2 tablespoon oil
curry Leaves
corriander Leaves
salt to taste

Method:

Boil Eggs and remove the shell.
Heat oil in a pan. Splutter mustard and curry leaves. Add the whole spices one by one. Add onions and saute until turns brown. Add Chilli powder, Dhania powder and Turmeric powder to the onion. Saute it until the raw the smell goes. Add tomatoes to it and sprinkle little water. Cover and cook for 5 mins. Add salt and garam masala. Add eggs to the curry. Garnish it with Corriander leaves.
