Pav Bhaji

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Serves 4


I absolutely use almost any vegetable that is in stock or say I make it when my fridge needs to be emptied. I have mentioned the vegetable I used this time but then feel free to experiment.





Ingredients:

2 potatoes
1 capsicum
1 beetroot (secret behind the red color)
1 carrot
1 small onion chopped
1 small tomato chopped
1 teaspoon ginger garlic paste
1 teaspoon chilli powder
1 tablespoon pav bhaji masala
butter

Method:

Cut all the vegetables and pressure cook for three to whistles. Drain excess water. You can use this stock while making Bhaji . Mash the vegetables without leaving any lump.

Heat butter in a heavy bottom vessel.

Add chopped onions and saute until it turns transparent. Add ginger garlic paste, chilli powder, pav bhaji masala and salt. Saute until the raw smell goes.

Add tomatoes and saute for a minute. Add the drained vegetable stock to it. Cook for few more minutes. Mash onions and tomatoes well.

Add mashed vegetables to it and cook until it gets to a desired consistency.

Serve it with toasted bread/ desi pav, finely chopped onions, coriander leaves and lemon wedges.

Onion Bajji

Preparation Time: 15 mins
Cooking Time: 10 minutes
Serves 4











Ingredients:

1 cup besan/kadala maavu/gram flour
1/2 cup minced onion
1 cup finely chopped corriander leaf
1/2 cup finely chopped green chillies
1/4 teaspoon asafoetida
salt to taste
oil for frying

Method:

Mix all the ingredients in little water. The batter should not be too thin. It should be a little thicker than idli/dosa batter.

Heat oil in a pan and deep fry.

Paneer Fingers

Preparation Time: 20 mins
Cooking Time: 15 mins
Serves 4












Ingredients:

200 gms paneer
1 tbsp chopped ginger
1 tbsp chopped garlic
5-10 whole red chillies
1 teaspoon oil
cury leaves
salt to taste

Method:

Heat oil in a pan. Add the chopped ginger, garlic, red chillies and curry leaves. Saute for a min and add paneer fingers to it. Add salt and saute until paneer cooks and gets crispy. Cook in low heat.

ALOO SANDWICH



Ohhh...last saturday was one of those lazy boring days...Vino was out playing tennis and I had really nothing to do. I was thinking of some quick snack and thats when all the potatoes and bread came to my mind. I think I can call this a desi sandwich...


Preparation Time: 10 mins
Cooking Time: 30 mins

Ingredients:
2 Potatoes, boiled and mashed
1 small onion, chopped
1/2 cup green peas
1 small carrot, grated
1 teaspoon lemon juice
1/4 inch ginger, chopped
1/4 teaspoon garam masala
1/2 teaspoon chilly powder
6 slices of bread
Cilantro
Salt to taste
Oil

Method:
Heat oil in a pan. Add Onions and saute it until it turns golden brown.
Add chilly powder, turmeric powder and salt to it and saute it well for little more time.
Add green peas and grated carrot. Cover and cook until done.
Add mashed potato and stir it well. Add garam masala to it.
Switch off the stove. Add lime juice, garam masala, cilantro and mix well.
Take a bread and spread the mixture on it.
Cover it with another bread and put it in the sandwich maker.

Hot and Spicy Aloo Sandwich is ready to eat...
Serve it with ketchup.
