Coconut Milk Rice

Preparation Time: 10 mins
Cooking Time: 15 mins
Serves 2













Ingredients:

1 cup rice
3/4th cup coconut milk
1 inch cinnamon stick
4 - 6 cloves
1 bay leaf
1 small star anise
1 cup frozen vegables (carrot, peas, beans)
4 - 6 green chillies
1 sprig mint leaves
2 teaspoon ghee
1/2 teaspoon oil
salt to taste

Method:

Wash and soak rice for 10 minutes. Drain the rice and spread it on a plate. Drizzle oil on rice and microwave it for 5 minutes.

Heat ghee in a cooker. Add the whole spices and saute for a minute. Add the vegetable, green chillies, mint leaves and saute for 2 - 3 minutes. Add 1 1/4 cup of water and 3/4 cup of coconut milk. Add rice to it and pressure cook for a whistle.
